This delicious autumn-inspired dessert is a great way to start or end your day. Needless to say, Simona makes the best – enjoy it oven fresh at the City Hotel or take it home. If you can’t come to the hotel and treat yourself with our dessert each and every day, do it yourself. Simona Kralj, the hotel’s pastry chef, shared with us her recipe for this tasty dessert. Filled chocolate muffins are just one of the popular sweet temptations that Simona prepares for our hotel guests on a weekly basis. According to her estimate she bakes approximately 200 muffins every month. With the following recipe, success is guaranteed!
To make filled chocolate muffins you will need:
- 2 free-range eggs
- 100g sugar
- 230g plain flour
- 50g cocoa powder
- 1 packet of baking powder (15 g)
- 100g ground hazelnuts
- 100g chocolate
- 0.5dl oil
- 200ml milk
- chocolate spread
Ingredients for the frosting:
- 100g chocolate
- 70ml heavy cream
Preparation time: 10 minutes
Baking time: 18 minutes at 180C
Method: Beat the eggs and the sugar until frothy. Add the cocoa and baking powder to the flour and mix well. First add the milk and the oil and then the eggs mixed with sugar to the dry ingredients. Finally add the ground hazelnuts and the roughly chopped chocolate into the mixture. Place muffin cases into the muffin tin and spoon the mixture halfway up the cases. Top with about 1 tbsp of chocolate spread. Fill up the muffin cases with the rest of the mixture, covering the spread; this way the muffins will have a nice dome to them and the spread will not sink to the bottom.
Bake for 18 minutes at 180C.
Allow to cool and top with frosting.
To prepare the frosting melt the chocolate and mix in the heavy cream. Remove chocolate from heat before adding heavy cream.
